Christmas pinwheel cookies provide red‚ white‚ and green designs for on your holiday cookie tray․ Pinwheel cookies work well for anyone planning to make many Christmas cookies ahead of time․ I make Christmas pinwheel cookies dough ahead and bake cookies later․ Christmas pinwheel cookies look nice arranged on cookie trays․

I use room-temperature butter and egg․ Mix the dough by hand with flour and other ingredients until it forms a dough․ Then knead the dough to add food coloring․ There's no need to knead the dough extensively before adding food coloring․ I suggest using pure vanilla extract and gel food coloring‚ which is very strong and needs only a few drops․
The rolling technique can be challenging‚ especially if you lay out the squares and roll from one end of the log․ Parchment paper keeps the log in place while rolling and makes it easier to work with dough that begins to curl (which can be challenging)․ Trim the sides of the log with a pizza cutter before rolling to remove excess dough and pinch any openings in the log․
Don't make the sheets too thin for ease of handling․ Dust your work surfaces and other tools thoroughly with flour so that the dough sticks only to itself․ Slice dough sheets using a knife to 1/4-inch thickness․ Cool cookies on the baking sheet for 5 minutes before removing them to a wire rack․

Ingredients
- •2 cups all-purpose flour (plus more for dusting)
- •½ teaspoon baking powder
- •¼ teaspoon salt
- •12 tablespoons unsalted butter (room temperature)
- •¾ cup sugar
- •1 egg (room temperature)
- •1 teaspoon vanilla extract
- •½ teaspoon liquid red food coloring (1/2 to 1 teaspoon, to your color liking)
- •½ teaspoon liquid green food coloring (1/2 to 1 teaspoon, to your color liking)
Instructions
- 1
Mix the flour, baking powder, and salt in a medium mixing bowl. Set aside.
- 2
Beat the butter and sugar in a large mixing bowl for 1-2 minutes, until pale and fluffy. Beat in the egg and vanilla, scraping down the bowl as needed.
- 3
Add the dry mixture to the wet mixture in two additions, mixing only until combined after each one. Scrape down the bowl as needed.
- 4
Divide the dough into 3 equal pieces and roll each piece into a ball. Use a kitchen scale if you want even portions.
- 5
Put one dough ball back in the bowl and add the red food coloring. Beat until the color is fully mixed in, then clean the mixer paddle or hand mixer blades.
- 6
Return another dough ball to the bowl and beat in the green food coloring until fully mixed. Leave the third dough piece plain.
- 7
Press each dough piece into a flat square and wrap in plastic wrap. Refrigerate for 1 hour or until firm.
- 8
Take the dough squares from the fridge. Put the red dough between 2 sheets of parchment paper or waxed paper, then roll it into a 10-inch square. Leave it between the paper.
- 9
Roll the other 2 dough pieces into 10-inch squares between parchment paper or waxed paper. Refrigerate the cookie dough for 30 mins.
- 10
Remove the dough from the fridge and peel the top parchment from each square. Set the red dough on the counter and place the white dough over it, with the uncovered sides touching and the edges lined up.
- 11
Peel away the parchment from the white dough, then place the green dough on top with the uncovered sides touching. Remove the green parchment and trim the left and right dough edges straight with a pizza cutter.
- 12
Starting at one trimmed side, carefully roll the stacked dough into a long log, using the parchment to lift the dough as you begin. Pinch the seam and any breaks in the outer red layer closed.
- 13
Wrap the dough log in plastic wrap and refrigerate for 1 hour or until firm.
- 14
Heat the oven to 350 degrees F. Line a baking sheet with a silicone mat or parchment paper.
- 15
Cut the dough log into 1/4-inch thick slices with a sharp knife, discarding the ends. Place the cookies 2 inches apart on the prepared baking sheets and bake for 12 to 15 minutes, until set.
- 16
Cool the cookies on the baking sheet for 5 minutes, then move them to a wire rack to cool completely. Serve immediately or store in an airtight container until ready to serve.
