Start with an 8-ounce wheel of cold brie․ Remove the rind and cut the brie into 24 pieces․ Cold brie is less likely to ooze when cutting․ Pieces of brie will melt into the cranberry sauce as they bake in a crescent roll dough cup in the pan․

I include refrigerated crescent roll dough and canned whole berry cranberry sauce‚ as well as chopped pecans and fresh rosemary‚ with the brie․ One can of crescent roll dough will generally work for a 24-cup pan․ Spoon cranberry sauce into the pan and‚ optionally‚ add toasted pecans and other ingredients for flavor․ Fresh rosemary provides savory flavor․
I spray my mini muffin tin with nonstick cooking spray and press down a small piece of dough in each muffin tin․ I put a small amount of cheese or other filling inside․ Large amounts of filling will cause the cheese to overflow and lead to poorly browned crust on the bottom of each muffin; a small amount of filling will allow the crust to rise and brown well around the brie or other filling․
Let baked snacks sit in the pan for 5 minutes before serving․ I offer baked snacks as hot appetizers at dinner parties․ Baked snacks may also be offered on the side as appetizers during pre-dinner socializing with party guests․ Garnish individual baked snacks with a rosemary sprig just before offering them to guests․
Why you'll love this recipe
- Five measured ingredients fill a 24-cup pan‚ and a cranberry sauce recipe yields a full tray of appetizers․
- The brie is baked in individual dough molds so that chunks of brie are gooey in the center․
- Whole cranberry sauce is an easy option for including fruit in your Thanksgiving meal without further cooking․
- Try toasted‚ chopped pecans for extra nut flavor or omit the pecans․
- A small amount of chopped rosemary can season 24 servings and leave whole rosemary stems for decoration on the serving dish․
